If we would like to delete our chat history so that it doesn't slow things down, but would like to download the archive of logs prior to doing so, can that be done? If so, how? Thanks.

Can't be done in a traditional way. The only thing you can do is export your database table.

How would it be done form the chatroom?

You can download the message history from the database from this path:
arrowchat_chatroom_messages
