Is there any way manually to add a button between "chat" and "Chatrooms" which will open a new window to a specified size and URL?

It's not implemented, but any custom modifications are possible.

You can change this in the language file since the language file will support HTML, but I'd recommend keeping the more link and changing the video chat language since we'll be adding more options to the more drop down shortly.

language/en/en.php

It should be fairly obvious in that file...just look for "More".
